Ingredients : Mahi Mahi Tataki • Mahi Mahi Tataki • Mahi mahi loin • Corn oil • Fine sea salt • Milled black pepper • Milled white pepper • Rubbed pink pepper skin Almond & Ginger Sushi Rice • Almonds • Ginger • Garlic • Unsalted butter puree Salted Yuzu & Shiso Compote • Yellow yuzu • Coarse sea salt • Water • Green shiso leaves (Oba) • Extra virgin olive oil Pickled Fennel • Large piece of fennel • Coarse sea salt • Sushi vinegar Inspiration : Mahi Mahi is a large Pacific game fish with soft and succulent white fresh. It is not traditionally used for sushi and sashimi in Japan, but I believe it is an ideal fish for both. It is very popular in Hawaii where it is usually served grilled. I particularly wanted to use Mahi Mahi for this competition to raise the awareness of this fish. It is especially good for tataki and carpaccio style dishes so I believe that if more chefs were aware of it they could use it in modern cooking in place of bluefin tuna, which would help to ease the current burden on that species. Mahi Mahi has proved to be very popular in my restaurant with both Japanese and Western customers. If yellow yuzu is not available, the compote can also be made with lemon, although a much longer cooking time is required to ensure the skin is soft all the way through.

This dish is particularly ideal for smart occasions such as cocktail parties. Ingredients: Tuna Parfait Sushi • Sushi rice • Finely diced tuna • Mixed with a dash of sesame oil • Finely chopped chives • A sprinkle of 7 spice powder • Wasabi tobiko • Tuna • Black Caviar Califonia Parfait Sushi • Sushi rice • Salmon (finely diced) • Avocado (finely diced) • Tobiko • Salmon • Cucumber
Mr. Tai Po Wong Tofu Dengaku Nigiri Occupation: Chef at the Harrods Sushi Bar Lives in: London Nationality: Chinese (HK) Description of Dish: Imaginative vegetarian sushi with deep fried crispy tofu grilled with sweet miso paste. Highly recommendable for first time sushi eaters. Ingredients: • Tofu • Oil • Sweet Miso • Mirin • Sugar • Sushi rice

Ingredients: • Sushi rice • Tobikko (English fish eggs) • Black sesame seeds • Sun-dried tomato • Avocado • Salmon • Nori
