Sayan is the Executive Chef and Co-Owner of two of Sweden’s top restaurants, Esperanto and Råkultur.

Ever since graduating from culinary school as the number one student in his year, Sayan has built up a truly impressive professional portfolio, which includes the following achivements:

2000 Member of the Swedish Culinary Team at the International Culinary Art Competition
2002 Member of the Gold-Medal Winning Swedish Culinary Team at the International Culinary Art Competition
2004 Member of the Gold-Medal Winning Swedish Culinary Team at the International Culinary Art Competition
2005 Opens his first restaurant, Esperanto, with Daniel Höglander
2006 Esperanto awarded Best Newcomer in the White Guide (Sweden’s leading restaurant guide) and ranked 3rd best restaurant in Swede
2007 Esperanto awarded a Michelin star
2008 Esperanto ranked as Sweden’s number one restaurant by the White Guide, and 72nd in the S.Pellegrino World’s Best Restaurants ranking

This phenomenal success led to the opening of a new venture, Råkultur (Raw Culture), in 2009. Opened with Daniel Petterson and Sushi chef Frida Ronge, this sushi restaurant is enjoying similar success to its predecessor.

Sayan’s inclusive and innovative approach to cooking is one of the secrets to his success. His sushi promises to blend the traditional fundaments of the cuisine with the flair and delicacy that has seen him beat the rest of the world to gold twice in the Olympics of the culinary world.

sushi awards 2009At Esperanto we managed to create our own style; one of romance, of surrealism and of precision. We wanted to be free spirits in the kitchen, not labelled as a French or an Italian restaurant; instead we ended up with a subtle mixture of different culinary cultures producing borderless cuisine.



At Råkultur, along with Frida, we’ve adopted a broadly similar approach to that of Esperanto. We’ve started with a classic sushi base and added the same subtle combination of influences and we’ve managed to produce a sushi that is very lively and modern – much to the liking of our customers.

sushi awards 2009Our goal at Råkultur is always to learn more and to motivate ourselves, working with and being inspired by other chefs to achieve the best sushi in all Scandiavia.
