Sayan is the Executive Chef and Co-Owner of two of Sweden’s top restaurants, Esperanto and Råkultur. Ever since graduating from culinary school as the number one student in his year, Sayan has built up a truly impressive professional portfolio, which includes the following achivements:
This phenomenal success led to the opening of a new venture, Råkultur (Raw Culture), in 2009. Opened with Daniel Petterson and Sushi chef Frida Ronge, this sushi restaurant is enjoying similar success to its predecessor. Sayan’s inclusive and innovative approach to cooking is one of the secrets to his success. His sushi promises to blend the traditional fundaments of the cuisine with the flair and delicacy that has seen him beat the rest of the world to gold twice in the Olympics of the culinary world. ![]() At Råkultur, along with Frida, we’ve adopted a broadly similar approach to that of Esperanto. We’ve started with a classic sushi base and added the same subtle combination of influences and we’ve managed to produce a sushi that is very lively and modern – much to the liking of our customers. ![]()
