KINKI & CHUGOKU

This region, and in particular, Hyogo prefecture and the Nada area of Kobe city, is generally regarded as the most important sake brewing region in Japan.

There is an abundance of excellent sake brewing water in the Kobe area, which flows from the nearby Mount Rokko, and is known as miyamizu. This clean, hard water characterises the taste of the sake from this area, which is often described as masculine, with crisp, solid flavours.
