KANTO & KOSHIN-ETSU

Kanto, which of course includes the conurbation of Tokyo and Yokohama, is not the first that springs to mind when one thinks of sake producing areas, but that is not to say that it is bereft of notable brewing regions and sakes.

Although Koshin-Etsu does not cover many prefectures, sake from this area, and in particular that from Niigata prefecture, is hailed by many as some of the best in the country. Again, the natural conditions contribute greatly to this, with cold winters, clean air, ideal, slightly soft water and an abundance of good sake rice all combining to create an ideal environment for producing excellent sake.
