TENGUMAI'S SELECTED BRANDS![]() TENGUMAI Yamahai Junmai Ginjo With rice polished to 45% its original size, the yamahai brewing method this brewery is famed for has allowed the satisfying flavour of the rice to be fully drawn out. A beautiful sake with a light fragrance and a down-to-earth flavour. This is a sake which makes an ideal companion to a range of cuisines, and can be enjoyed at room temperature or gently heated to around 35 degrees Celsius. The yamahai brewing method is time-consuming, requires the utmost attention to temperature control and the fermenting sake must be kept covered and protected at all times. This effort is worth it however as it gives the sake a particularly pleasing balance between strong fragrance and flavour and a distinctive acidity. Seimaibuai: 60.0% Alcohol percentage: 15.0% Sake meter value: +4 Acidity: 1.9 ![]() TENGUMAI Bunsei Roku-nen The name of this premium junmaishu commemorates the opening of Shata Shuzo in the sixth year of the Bunsei period (Bunsei roku-nen), or 1823. Using 100% finest sake rice polished to around 55% of its original size, this is a top quality junmaishu which is distinctive for its subtle, mature fragrance and mild taste. The flavour of the rice in the sake gives to the drinker's palate a real sense of the gifts of nature. This sake is at its best when enjoyed at room temperature or gently warmed to around 36 degrees Celsius. Type: Junmaishu Capacity: 720ml, 1800ml Taste: Medium Rich & Medium Dry
