OKUNOMATSU

Established in Fukushima in 1716, and tracing its roots back to a samurai family, the Okunomatsu Sake Brewery has for three centuries produced some of the finest sake in the Tohoku area of Northern Japan. The brewery has never been content merely to rest on the laurels of its reputation and long history; rather, it has constantly strived to keep its traditions alive while developing more innovative methods of sake production. For instance, Okunomatsu's use of pasteurisers to minimise the loss of flavour which can occur during brewing means that they are able to provide their customers with sake that maintains all the strength, rich taste and fragrance of genshu. Okunomatsu sees sake as being at the very heart of Japanese culture and are determined to pass this on to the next generation.
