ICHINOKURA'S SELECTED BRANDS![]() ICHINOKURA Junmai Karakuchi Miyagi is known as one of the prime rice growing areas in Japan, and this sake is brewed entirely from locally produced premium sake rice. This junmaishu is painstakingly brewed by hand in line with Ichinokura's traditions, and has a distinctive flavour which possesses both elegance and real depth. This excellent sake is hugely popular in bars and restaurants across Japan, and regularly appears among the top ranked sake as voted for by the public. Seimailbuai: 55.0% ABV: 15.0% - 15.9% Sake meter value: -1 - +3 Acidity: 1.3 - 1.5 ![]() ICHINOKURA Enyu This junmaishu is made from special environmentally friendly rice which is grown without any pesticides or chemical fertilizer. The rice is carefully polished to 60% of its original size and is brewed using the time-consuming and difficult yamahai method, in which the rice and yeast is left to ferment without being stirred. After fermenting for a period of one year, with the utmost attention paid to temperature and conditions, the sake develops a strong, rich yamahai flavour, while remaining smooth to drink. Highly polished rice is brewed over a long period of time at low temperatures producing a pleasingly rich ginjo fragrance and a complex mix of flavours.
