Ichinokura is located in the town of Matsuyama in Miyagi prefecture, a region blessed by beautiful natural surroundings. Clean, mineral-rich water flows underground and the finest sake rice grows locally. Ichinokura is extremely exacting when it comes to selecting not only the best rice and water, but also the very best people to brew its sake, which continues to be made by hand. The techniques of the region's Nanbu toji live on in the traditional sake produced by the brewery. However, the Ichinokura brewery does not merely rely on tried and tested techniques, and the use of new technology by the brewery to develop new low alcohol varieties of sake has received acclaim nationwide.
