UZEN SHIRAUME Junmai Daiginjo

A daiginjoshu with real depth, this is the sake which best represents the brewery. Translating as "White Plum", one can imagine the brewery's founder choosing this name after viewing the delicately scented flowers of the plum tree blossoming after the cold winter, comparing the brewing process to the life of a flower from bud to full bloom. Brewed by hand using traditional methods, this goes perfectly with cuisine with quite strong flavours but mild aromas such as fish cooked in broth, fatty seafoods and mild cheese dishes.

UZEN SHIRAUME Junmai Ginjo Chirori

The name Chirori comes from the copper vessel in which sake is traditionally heated. This is a sake which can be enjoyed heated as atsukan, and is ideal for relaxing and unwinding. This ability to appreciate different flavours at different temperatures is one of the delights of Japanese sake. As it won't overpower the taste and aroma of food, this sake makes a perfect accompaniment to the subtle flavours of a range of Japanese food such as sushi, sashimi, tofu dishes and nabe stews.

UZEN SHIRAUME Junmaishu

Brewed from Yamagata prefecture's top-grade Miyama Nishiki sake rice, this sake is mild and delicate when young, but has been matured to a smooth yet robust junmaishu. Brewed slowly, using traditional methods and specially cultivated yeast, the fermentation process gives it a crisp, clean edge. Mixed carefully by hand in an old-fashioned tub, it is then transferred to bottles and matured in refrigerated conditions. Again, this sake will not interfere with the delicate flavours of sushi, sashimi, tofu and nabe stews.
