Hong Kong: city'super Akita Shurui Seizoh, which created the Takashimizu brand, developed out of 12 of Akita’s small breweries joining forces in 1944 in order to overcome the wartime shortage of ingredients. These breweries gave up the brand names they had inherited and took the name Takashimizu, the name of the hill on which Akita castle had once stood. A new brewery was built in Kawamoto, where three rivers meet, a place known since the time of the samurai as a source of the purest water. Since then, Takashimizu has used this water, the finest Akita sake rice and traditional local brewing methods to produce sake of the highest quality. As a result, Takashimizu has received numerous awards in sake competitions. Today, Takashimizu sake is widely-known for its fruity fragrance and elegant, clean taste and goes perfectly with everything from local Akita dishes to classic Japanese cuisine such as sushi, sashimi and tempura.

Feng Sushi are now taking reservations for the last course of the season at the perennially popular Feng Sushi School. These day-long courses provide an ideal chance to gain sushi skills from professionals which can be retained forever.
