TAIHEIZAN'S SELECTED BRANDS![]() TAIHEIZAN Tenko One of the finest sakes produced by Kodama, Tenko is made entirely using traditional methods. This junmai daiginjoshu is brewed using specially cultivated kimoto yeast and is notable for its fruity fragrance and clean, crisp taste. Tenko has won a range of awards, including gold at the National New Sake Tasting Competition, top prize at the USA National Sake Competition five years in succession, and gold at the European Monde Selection in 2000 and 2001. Taiheizan's kimoto brewing method, which is characterized by the use of natural lactic acid bacteria to promote the growth of strong yeast, gives this sake its umami-rich, sharply-defined flavour. Widely known and appreciated within Japan, Kimoto Junmai has also enjoyed overseas success, winning the European Monde Selection gold award six years in a row.
