USA: Wine of Japan Import, Inc. The Hinomaru brewery, founded in 1689, is located in the south of Akita prefecture, an area of heavy snowfall and some of the most fertile rice growing land in Japan. Covered by snow for most of the year, the pure, mineral-rich water running beneath the surface is drawn from wells, and used along with high-grade rice in Hinomaru sake. All the brewing is done by hand, with no corners cut, in pursuit of a sake with a perfect balance between richness and sharpness. The sake thus produced is then decanted into individual bottles in which it is further matured, with great attention paid to the temperature and conditions. The heart of the brewery's production is premium ginjoshu with an elegant and full flavour.
