Deeply impressed, he gave it the name it retains to this day; Hideyoshi, which refers to the legendary feudal warlord Toyotomi Hideyoshi and means "excellence" (hide) and "goodness" (yoshi). The Senboku district of Akita is one of Japan's leading rice-growing areas, producing sake rice of the highest quality, and is supplied by pure fresh water from the nearby mountains. While maintaining the traditional methods of sake production, Hideyoshi is not afraid of new challenges, such as developing a new strain of Akita sake rice, as well as the region's first junmai yeast.
