CHIYONOSONO'S SELECTED BRANDS![]() CHIYONOSONO Daiginjo Excel Chiyosono's Daiginjo Excel has been described as the 'king of sakes'. It benefits from the wonderfully clear water that flows from nearby Mount Aso, and the top quality Yamada Nishiki rice used in its production. It offers a gentle acidity, combined with a well-rounded fragrance that is quite unmistakable. What is more, drinkers can enjoy the bottle-aged qualities of this sake, thanks to its cork stopper. Alcohol percentage: 15.5% Sake meter value: +4.5 Acidity: 1.4 ![]() CHIYONOSONO Shuhai Shiro Label This sake offers the quintessential Chiyonosono combination of richness coupled with a light, easy-drinking character. The particular characteristics of this junmaishu are its light, rounded finish, and mellow fragrence, and it may be enjoyed equally well as hiya or nurukan. It is made using Miyama Nishiki rice, which is one of the quintessential sake rice strains. The name shuhai literally means ‘vermillion plate’, and refers to the vessel from which sake was drunk by the brewery’s workers when the first post-war junmaishu was produced in 1968. It is fragrent and supple, and with a refreshing finish, and like all Chiyonosono sakes, benefits enormously from the abundant natural resources of the Aso area.
