TSUKASABOTAN'S SELECTED BRANDS![]() Daiginjo Genshu Tenpyo Jirushi Senju TOSATSURU This is the sake for which Tosatsuru is best known, enjoying a worldwide reputation. It is brewed with the utmost attention to detail under the close supervision of the toji, with rice polished to less than 40% its original size. An undiluted genshu bottled direct from the storage barrel, this possesses a deep ginjo bouquet and a smooth, mellow taste. This healthy mineral water is famously free from pollution, and the brewery has spent a long time researching how to best use this precious resource in order to produce a special ginjoshu. The final product comes as a result of countless trials; a new kind of ginjoshu with a smooth, clean taste and a light refreshing finish. The full, delicious flavour of the Yamada Nishiki rice has been drawn out and preserved in the final product. It makes an ideal accompaniment to fresh hand-rolled sushi, particularly tuna and squid.
