SHOCHIKUBAI'S SELECTED BRANDS![]() SHOCHIKUBAI Shirakabe-Gura A ginjoshu produced entirely from the very finest Gohyakumangoku sake rice polished until it is 60% of its original size. The entire brewing process is carefully overseen by chief brewer Fujio Mitani and the yamahai method for which the brewery is renowned is used. This means that the sake is brewed slowly without constant mixing of the rice and yeast. Master brewer Fujio Mitani has made every effort to ensure that the rich flavour and fragrance typical of junmaishu has been preserved, combined with a sharp, crisp edge to the sake. Mitani's insistence on the importance of the preservation of the traditional yamahai brewing technique is responsible for the complexity, depth and delightful acidity of the flavour. Brewed using the famously pure fushimizu water which flows underground in the Fushimi district of Kyoto, this sake has a real elegance and a sharp, clean finish.
