UMESHU JELLY
Umeshu Zerii
Umeshu is a deliciously refreshing fruit-based liqueur made from ume, an apricot-like fruit. You can read all about umeshu here.
INGREDIENTS
Makes 5 servings
- 5g powdered gelatine*
- 2tbsp water
- 150ml umeshu
- 50ml water
- 300ml sparkling water or Sprite
- 50g sugar
*If you’re vegetarian, you can replace this with agar agar, or kanten, a vegetable gelling agent made from seaweed. Check the packet for how much you should use.
METHOD
- Leave the gelatine in 2tbsp of water to soak.
- Put the umeshu, 50ml water and sugar in a deep pan at a low heat. Turn off the heat before it boils and when the sugar is melted.
- Put 1 into 2 and stir until the gelatine dissolves.
- Pour sparkling water in 3 and mix gently. Divide into five glasses and leave in the fridge overnight.
TIPS
-If you want more umeshu flavour, you can add 50ml more umeshu instead of the water.
-For children, you can use fruit juice or calpis, (a Japanese uncarbonated soft drink with somewhat milky and slightly acidic yogurt flavour) instead of umeshu.
-If you would like the jelly to be firmer, add 50ml less sparkling water.
