UMESHU JELLY

Umeshu Zerii

Umeshu is a deliciously refreshing fruit-based liqueur made from ume, an apricot-like fruit. You can read all about umeshu here.

UMESHU JELLY

INGREDIENTS

Makes 5 servings

  • 5g powdered gelatine*
  • 2tbsp water
  • 150ml umeshu
  • 50ml water
  • 300ml sparkling water or Sprite
  • 50g sugar

    *If you’re vegetarian, you can replace this with agar agar, or kanten, a vegetable gelling agent made from seaweed. Check the packet for how much you should use.


METHOD

  1. Leave the gelatine in 2tbsp of water to soak.
  2. Put the umeshu, 50ml water and sugar in a deep pan at a low heat. Turn off the heat before it boils and when the sugar is melted.
  3. Put 1 into 2 and stir until the gelatine dissolves.
  4. Pour sparkling water in 3 and mix gently. Divide into five glasses and leave in the fridge overnight.

TIPS

-If you want more umeshu flavour, you can add 50ml more umeshu instead of the water.

-For children, you can use fruit juice or calpis, (a Japanese uncarbonated soft drink with somewhat milky and slightly acidic yogurt flavour) instead of umeshu.

-If you would like the jelly to be firmer, add 50ml less sparkling water.
