Soba Noodle Salad with Soy Sauce Dressing

INGREDIENTS

Serves 4

• 160g Clearspring Soba Noodles (or Udon, Wide Udon, Brown Rice Udon)
  Some coriander, watercress and rocket

A

• 100ml Clearspring Brown Rice Vinegar
• 100ml Clearspring Tamari Soya Sauce
• 50ml Clearspring oil
• 1/2 onion
• some Clearspring Wasabi or sweet chilli sauce

METHOD

1. Cook the soba as instructed on the pack. Drain and immediately plunge into a bowl of cold water.
2. Drain the soba, then place on a plate and arrange the greens on top.
3. Use a blender to liquidise the onion. Alternatively, chop it very fi nely. Mix the remaining ingredients (A) and pour over the noodles.
