Quick and Easy Japanese Dressing
& Mild Pickles

Sushisu – vinegar made from a special combination of rice vinegar, sugar and salt – is low in calories, free from fat and cholesterol and has a slight sweetness making it a real larder essential. Mizkan Sushisu Vinegar is so simple to use – for sushi, just pour it over cooked Japanese short grain rice and mix for instant authentic sushi rice. But it can be put to great use in everyday cooking too – use in dressings, vinegared salads, or even as a guilt-free condiment to enhance other fl avours.

The Secret to Authentic Sushi

The key to making great sushi at home is getting the rice right, and the key to getting the rice right is the sushisu. Make up some rice according to the recipe on p11, then pour over ready-made Mizkan Sushisu Vinegar, and mix up, taking care not to crush the grains of rice. INGREDIENTS

Japanese Dressing – [Serves 2]
  • 100ml Mizkan Sushisu Vinegar
  • 100ml soy sauce
  • 50ml vegetable oil
  • 1/2 onion
  • Serve with any vegetables of your choice or pour over steak or grilled fish.
Mild Pickles
  • 200ml Mizkan Sushisu Vinegar
  • 40ml water
  • 1 bay leaf
  • pinch of black pepper pickling vegetables: tomato, cucumber, carrot, celery or any other vegetable

METHOD

Japanese Dressing – [Serves 2]
  1. Use a blender to liquidise the onion. Alternatively, chop it very fi nely.
  2. Place all the ingredients together in a jar, mix well, and pour over whatever you like.
Mild Pickles
  1. Cut the vegetables into bite-sized pieces.
  2. Pour the vinegar mixture into a jar and soak the vegetables for 2 – 3 days.
