Knives for professional use

You can use either a Western knife (far left) or Japanese knives (5 knives from right 3 deba knives and 2 yanagiba knives). It is your responsibility to bring sharpened knives to the workshop as you may encounter difficulties using a blunt knife. The blade of your knife/knives should be no more than 4cm wide.
