Chef Yasuhiro Mineno, one of the UK’s leading Japanese chefs, has overseen these six exclusive recipes, commissioned to celebrate our tenth anniversary.

After competing in the Eat-Japan Sushi Awards 2007 as one of our Seven Sushi Samurai, Chef Mineno returned in 2009 to support the Awards as a Sushi Master. Chef Mineno first came to the UK in 1996, where he worked at Yumi, before moving to Nobu Group’s Ubon in 2001, becoming Head Chef in 2004. As well as his mastery of sushi, Chef Mineno is a long time disciple of kaiseki ryori, Japan’s most revered and intricate form of culinary art.

Now, Yasuhiro is bringing the authentic sushi experience to the UK. Later this year he will be opening his first sushi bar, Yashin, in London, with Shinya Ikeda – another former Sushi Samurai. Together, Yasuhiro and Shinya will serve pared-down, elegant sushi from behind the Yashin counter. The menu will be designed to highlight the simple yet stunning flavours and textures that have made sushi one of the world’s most renowned cuisines. Destined to be a must-visit for any true sushi lover, Yashin will be a place where you can experience the true warmth and welcome of an authentic sushi restaurant.
